Njeguški pršut or smoked ham is a meat specialty rom the village of
Njeguši in the South of Montenegro and an unavoidable item in every local cuisine. The location of the village is such that it is exposed to specific microclimate – the air from the mountains mixes with the air from the sea south giving the prosciutto a special flavour and aroma.
This traditional dried meat product is made of pig legs in a specific way that starts with the salting process, followed by the slow smoking process of combustion of dry beech wood and then is subjected to a drying process of at least nine months, during which time the prosciutto matures.
It is the first product from the territory of Montenegro that is protected by a national code by a quality label, and in this way, the prosciutto is protected from misuse and imitation in the food production sector. It is a significant step for Montenegro on its way to protects small business and traditional production.
